My Kids Ate Beets, and Loved Them


 

They did not know they were eating beets. Sneaky Mommy!

This recipe came from Natural Grocers, but I altered it slightly and renamed it Red Velvet Brownies, instead of Brilliant Beet Brownies.

These chocolaty wonders are delicious, especially if you deprive yourself and your family of sweets like I do. Mean Mommy!

Red Velvet Brownies A La Kelsey

3 small beets (this is usually how they come in a bunch at my local store

1/2 C. Honey

3 T.melted coconut oil

1 tsp vanilla extract

3 Eggs

1 C. Almond flour

1/3 C. Gluten Free All Purpose Flour

1/2 C. cacao powder

1 tsp. baking powder

Pinch of Sea Salt

Preheat Oven to 350 degrees. Boil or steam the beets until easily pierced with a fork. Allow the to cool, then chop and place in food processor with honey, coconut oil, and vanilla. Puree. Add the eggs and blend again until smooth. In a large bowl, sift together dry ingredients. Pour in the beet mixture.

Pour into a well-greased 8X8in glass pan and bake for 35-45 minutes or until a toothpick comes out clean. Cool before cutting.

I served these in little squares topped with a dollop of whipped cream. My kids and I loved them! The only downside is the cost of Almond flour. This will be a once in a while kind of treat.

You can make your own almond flour. I have tried, but just can’t get it into a fine flour-like powder. And if I go too far, it becomes butter. That, however, I do make on a regular basis! It’s really easy to make homemade almond butter. Coming soon….
